The vineyards are planted on albariza soilschalky, limestone rich soils similar to those of nearby Jerezwhich retain moisture and provide ideal conditions for Pedro Ximnez. Through sun drying and long aging, wines such as PX 1927 develop remarkable concentration and complexity, reflecting both the richness of the grape
